On September 29, 2017, the 7th Slow Food Global Congress was held in Chengdu, China, where nearly 500 international delegates from 92 countries gathered to celebrate the event.

The Slow Food Global Congress& the Slow Food International Global Council is the highest level meeting of Slow Food International, held every four years, with the aim of planning, coordinating and promoting the development of the global slow food movement and formulating action plans for each country. 2017 Slow Food International Conference is the first time to come into Asia, and chose Chengdu, China, which is known as the "UNESCO City of Gastronomy".

On the day of the conference, representatives from 92 countries and regions of Slow Food International and farmers from 21 provinces of China entered the conference waving flags, with different nationalities and skin colors coming together to illustrate the same belief in Slow Food.

The conference released the Chengdu Declaration and launched the global "Slow Village" program.
